1. The leaf is shaded before harvest

Matcha begins in the field. Tea plants are shaded before harvest so the leaf develops differently from ordinary green tea grown in full sun.

In cup terms, shading can support a deeper green appearance, more body, more umami and a smoother finish. The exact shading method and period can vary by product, farm and intended use, but the goal is the same: prepare the leaf for a better powder.

2. The harvest sets the direction

Harvest timing and leaf selection affect the final cup.

Younger, carefully handled leaves usually give a cleaner and smoother cup. Later or rougher material can still be useful, especially for recipes, dessert drinks or commercial applications, but it may carry more bitterness, astringency or grassy notes.

This does not mean every matcha must be used the same way. A matcha for usucha / clear matcha may need refinement and aroma. A matcha for latte may need enough body to stay present through milk. A matcha for recipes may need colour and flavour that hold up after mixing.

6. Packing and storage protect the work

The deeper lesson is that matcha quality is not created by one famous field, cultivar or milling method. It is a chain of connected decisions, and a weak link at any stage can still show up in the cup.

Quality starts as a system, not a single claim

Cultivar influences growth timing, colour potential, aroma and flavour direction. Shading changes how the leaf develops before harvest. Harvest timing affects tenderness and fibre. Processing then has to protect what the garden created. None of these factors works alone, which is why a cultivar name or a long shading period is not a complete quality guarantee.

Tencha processing has several control points

Traditional matcha is finely ground tencha. After harvest, the leaf is handled quickly, steamed to limit oxidation, cooled and dried without the rolling used for sencha. The dried material is then refined so stems, coarse veins and unwanted leaf pieces do not dominate the final texture.

Steaming is a balance. Incomplete heat treatment can allow oxidation to continue, while excessive heat can flatten fresh aroma or create cooked notes. Refining improves smoothness and clarity, but it also removes material. This is one reason careful production is a quality decision rather than a simple output race.

Grinding expresses quality; it cannot invent it

Milling changes particle size, heat exposure, aroma retention and mouthfeel. Stone milling is valued for fine texture and relatively gentle handling, while other systems can be designed for consistency and scale. The mill still begins with the tencha it receives. Fine grinding cannot turn poorly handled leaf into a clean, layered matcha.

Because matcha is suspended rather than dissolved, particle size matters after brewing too. Finer, well-managed powder can feel smoother and remain dispersed longer. Every matcha will eventually settle, so suspension should be judged together with flavour, not treated as a purity test.

Evaluate the powder across time

A useful quality check goes beyond the first hot sip. Smell the dry powder, taste the freshly whisked cup, return when it is warm, and notice the finish after it cools. Some roughness, stale aroma or persistent throat-drying sensations become easier to identify later.

Does a famous cultivar guarantee a better matcha?
