Hot matcha latte
Sieve 5g matcha. Add 30ml warm water around 55C and whisk smooth, then add 100-120ml hot milk.
Iced matcha latte
Sieve 6g matcha. Add 30ml warm water around 55C, whisk smooth, then pour over ice and 120ml cold milk.
Prep-ahead base
For cafe service, blend 60g matcha with 400ml water at 55C and 50ml syrup. Use 50ml base with 200ml milk and ice.
Creative drinks
Use as the recipe base for milk, fruit, chocolate or dessert flavours when you still want the matcha to show.
Storage after opening
Press out excess air, reseal airtight and keep chilled. Best around 5 Celsius. Avoid air, heat and sunlight.
