An is best for straight tea, gifting, and first comparisons when you want more depth than a latte-grade matcha.
Traditional usucha
Sieve 3g An. Add 150ml warm water at 55C. Whisk quickly in an M motion until fine foam forms.
Iced straight cup
Use 3g An with 110ml warm water at 55C. Whisk smooth, then pour over ice.
Premium latte
Use 4g An with 30ml warm water at 55C, then add 100-120ml milk if you prefer a softer cup.
Taste it straight first before adding milk. This makes the ceremonial character easier to understand.
